IF I was to start a new forum I would want it to be unique. Do you have any recommendations for style creators who I can get in touch with to see what they are capable of?

I have a personal preference for PixelExit (@Russ).... great support, great "off the shelf styles" that can be easily modified/tweaked (Bolt on my astro site is a classic example as well as Blackened Pro - an optional dark style offered).
And from the TRUE custom style perspective, the ones I've seen them do have been REALLY fantastic.

@Russ from Pixel Exit. His off the shelf styles are great but he also made an amazing custom style for a new site of mine recently.
