Wordpress - new editor for themes/navigation/pages

Anyone got any good resources for the "new" way that WordPress does their theme editing/navigation/page implementation.
Last time I played with it, it was a lot easier. Seems that now you have templates that you use for the master page and then you can include pages in it some way?
I've gotten stuck with helping a local clinic contractor try to figure out WordPress as they use Canva. The clinic owner knew I ran websites and assumed that I was familiar with WordPress even after I told her that I barely used it for a personal blog.
Since she's a family friend I don't feel right in charging her but I really don't want to sink hours and hours into it since she's already paying someone else.
