Privacy based phones, any suggestions?

Does anyone know of any privacy based phones? I'm only ever used to Apple and Android, and I hear that both of them often collect your data and share ad preferences and all that to other companies. With that being said, I hear there are companies out there modding smartphones to be more privacy based, this means they remove certain settings, such as tracking and ad preferences I believe.

I know one company in France I think it is, called Iodé. They make privacy infused phones and mod others. I've been considering getting one myself to see how private it truly is.

I think Apple has more privacy than Android as most Android phones have pre-installed apps and use Google apps. There are also privacy-based Android OS like Graphene OS you can try if your phone supports them.
