Why would I update the plugin or WordPress every time? Help me figure out why I need to update the plugin or WordPress every time.

Security reasons alone. You do not want to be in a position where your site is at risk. Even small ones with low/little traffic can be targeted. You also want to do this to ensure they are working properly with other plugins. Sometimes updates can break things and you don't want 10+ plugins that needed to be updated and left to sort out which is breaking what.

A plugin update is available means, that the plugin has been released with better functionality and all previous issues, especially concerning security, have been addressed. When you update your plugins, you will have a better version of the plugin.
