My favorite IPB plugin is definitely the status updates in the sidebar. It makes the site seem to much more alive when your members can express their feelings in a short, snappy status update.

I like the "Group Color" plugin that adds color to the usernames through out the forums. That way my premium member stand out along with staff.

That is hard to say since there are so many but the built-in features are also so good. Hm... I'll have to get back to you on that.
