Could I set up/make hidden servers?

So I am curious, is it possible to keep your servers hidden from the outside world? I would like to try to create my own private server, one that has my personal data and other stuff. And I kind of want to play around with the idea by building a private server. I just don't want outside networks to be able to connect at all. I figured a wired connection only. Is that possible to do?

I don't think that's possible, the internet is an interconnectivity of millions of computer systems and Electronic devices world wide, once you server is logged into the web, it not no more hidden, it can be traced even if it takes many years.

The only way is not to connect your serve to this internet, although today people browse with VPN for privacy but it can still be traced.

I feel you can but it wouldn't be all private except you have your own hosting or cloud server service because even though having your own private information would be expensive, your information would still be with the company providing the service.
