Is there a way for them to destroy yours or you theirs? Like I dunno spam their link on bad sites or something?

I suppose there is. In that case, I'd be on-guard about what goes on. However, though, SEO has gotten tough. It's tough to rank and it would be tough for ordinary people, even corporations I think, to smash someone's site. This is just an opinion, though, I'd strongly double check.

Someone who wants to destroy your SEO ranking may hack into your site and place a virus in your code, which can then affect users who visit your site. Obviously, Google wants its users to have a safe browsing experience, so it will either rank your site poorly on search results pages or remove it entirely. If you’re not monitoring your site properly, you may not even realize this has happened.

To protect yourself from malicious negative SEO attacks, it’s important to monitor your site frequently.
 
If your competitor does not have access to your site, he cannot steal your SEO. unless someone hacks your website and places malicious codes, it is not possible to destry your SEO.
 
Negative SEO methods can be used to lower a competitor's website rating in search engines. These tactics, however, are often frowned upon and may be ineffective in the long run.

But I don't think that this is ethical, as why do you want to lower your or cause harm to your competitors seo, as I believe you are taking it too far which is not a healthy competition.
 
Even if it's effective, it won't necessarily help you rank higher and faster if you don't have great SEO strategies. If the owner monitors their activities too, they can detect and block you fast.
