Hello, I'm thinking about setting up a basic website for a potential non-profit group I'm planning. I see a lot of cheap shared hosting providers (Bluehost, Hostgator, Godaddy, etc). My question is, would I still be able to set it up as www.<my domain>.org or would it be something like <mydomain>.<provider>.com (or net). This would be a very basic site, but I do want it to have its own name to lend some credibility.

I think namecheap is the best one, you can use your own domain but you have to buy it from either the hosting provider or a domain seller like goddady or namecheap.
If you want to start off with a free site you might contact the hosts and see if you can get something cheaper or for free.
